Southwest Chicken Chili


  • 1/2 tbsp Avocado, Coconut or Olive Oil
  • 1/2 lbs of boneless, skinless Chicken Thighs
  • 1 tbsp Cumin
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1 tsp Oregano
  • 1/2 tsp Coriander
  • 1/2 tsp Paprika
  • 1/2 tsp Chili Powder
  • 2 tsp Salt
  • 1/4 Red Pepper Flakes (you can add more if you like more heat or you can leave it out if you don't like spice)
  • 1 - 14.5 oz can of Diced Fire Roasted Tomatoes
  • 1 - 16 oz can of White/Cannellini Beans
  • 1 - 4 oz can of Green Chilis
  • 1 1/2 cup of Chicken Broth
  • 1 - 13.5 oz can of Light Coconut Milk

Toppings: Lime Juice, Tortilla Chips, Cilantro, Red Onion, Cheddar Cheese


Stove Top Method:

  • Heat a large pot over a medium high heat. While the pot is heating up, season the chicken thighs with 1 tsp of salt.
  • When the pot is hot enough, add the oil and then add the chicken thighs. Sear the chicken thighs on both sides until they have the golden brown look.
  • Once the chicken thighs are golden brown, add in all of the remaining ingredients and stir to combine DO NOT ADD the coconut milk.
  • Simmer on a low medium heat for 30 to 45 minutes or until the chicken thighs are tender and easy to shred.
  • Once the chicken thighs are tender, use 2 forks to shred the chicken in the pot. Then add the coconut milk and stir to combine. Add a little more salt if needed.
  • Let it simmer for 5 more minutes. Serve the Chili with your favorite toppings.

Slow Cooker Method:

  • Place all of the ingredients, EXCEPT the coconut milk, in the slow cooker insert and cook on low until the chicken is tender and ready to shred. Roughly 4-6 hours on low or 2-4 hours on high.
  • Then, shred the chicken in the cooker and then add in the coconut milk. Cook the chili for another 15-20 minutes in the slow cooker and then serve with your favorite toppings.

Time Management Tips to be More Productive

We all have those days that we are running around and feel overwhelmed and have so much that we need to finish/accomplish before we lay down in bed at night. Hopefully with these tips or ideas, you can be be in control of those crazy days and feel that you have accomplishment a lot by lunch or dinner time!



Plan your day the night before, this will help put those stressful minds at ease and get a good nights rest. The plan/to-do list gives you a good overview of how the day will pan out. That way, you don't get caught off guard. Your job for the day is to stick to the plan as best as possible.


Ideas on creating your plan for the next day: 1. you can be break it down to the basic (wake up, get dressed, get kids up for school, get breakfast, pack lunches, etc.) or 2. you can be vague with the list (get kids to school, get groceries, run errands, pick up kids, after school activities, etc.) 3. you can plan your errands in order from where you are located at and how many errands you can do before your next activity or appointment that you cannot move/re-schedule.



Be clear that you need to finish X task by 10am, Y task by 3pm, and Z item by 5:30pm. This will help prevent errands/activities/tasks from dragging on and eating into the time that is reserved for other activities.


For an example of a reasonable goal/timeframe to have all errands done by lunch time or by the time you need to pick up the kids from school. By accomplishing everything you can before the timeframe ends will give you some relaxation and you can focus on the activities or appointments that come after picking up the kids.



Having a calendar is the most fundamental step to managing your daily activities. If you use outlook or lotus notes, calendar come as part of your mailing software. Some smart phone have a calendar already installed. Use the calendar to the fullest, when you add events, activities to the calendar it will create block times fro those items. This will help you to know when you have free time or when you can run some errands in between activities.

We use a calendar to keep everyone on the team on the same page during our busiest days. It's even better if you can sync your calendar to your mobile phone and other hardwares you use - that way, you can access your schedule no matter where you are.
